The favourites here are fajitas. They are the best, simply sizzling with flavour. They even offer blue marlin fajitas (when available) for something quite out-of-the-ordinary. BSantiago's menu is very extensive and you can choose to just have a soup and salad - there's a Fajita Ensalada that's delicious or have a four-course meal.
Among the many entrees are the Seafood Enchilada, the New Mexico Green Chili Stew, and the Tostada Compuesta (chicken and beef served with crisp corn tortillas topped with cheeses, guacamole and sour cream).
Santiago's features Jimmy's Beer Burger, made with the house's own home brew and fresh ground beef. A must try. From Santiago's Cantina, try Mexican beer, sangria by the glass, or giant pitchers of icy margaritas. All the drinks are rather special, especially during Santiago's Rush Hour which happens every work day between 5:30 and 6:30 p.m.
Santiago's Mexican cuisine is served with sauces made from green chilis grown in the Mesilla Valley of Southern New Mexico, dried red chilis from the Chimayo Mountain area of New Mexico, and Colorado mountain grown pinto beans. What could be better for giving their food that authentic flavour of the southwest border cuisine? Chip, chip, ole!
