Marriott chef gets top spot in culinary contest

Their work was judged on taste, presentation and the most Caribbean ingredients used. There was also a judging of showpieces that were sculpted up to two weeks prior to the competition day.
The categories for awards were: main course dish, hot appetizer, dessert, hot soup, cold appetizer, cold soup and showpiece.
The coveted chef of the year award went to Nick Cavaretta of the Marriott Hotel. He also was presented with the hot soup chef of the year award.
The Awards of Excellence were presented to Mariadoss Jay in the showpiece and cold appetizer categories, Simon Richardson in the cold soup and main course categories, and Jochan Beranek for the hot appetizer and dessert categories.
Making up the Cayman National Team at the International Culinary Competition in Miami, will be Nick Cavaretta, Andrew Bodden and Robert William.
Also receiving medals were Eugene Pascal, Saravanan Appadurai, Maximo Mena, Simon Richardson, Jochan Beranek, Horace Brown, Cavallaro Gilibert, Mariadoss Jay, Tyrone Barnett, John Clark, Thomas Cardoza, Alexandra Schmidt, Baptist Fernandes, Nippat, Gary Marlon, Remedios Azavedo, and Eddy Cid Lantigua.
Judges were Andre Niederhauser, chairman of the Caribbean Culinary Federation, and Keith Griffin, head chef at the Lighthouse Restaurant.
Also at the event was a trade show put on by the sponsors of the culinary awards. They were Kirk's Wholesale, Foster's Food Fair, Foster Brothers, Jacques Scott, Island Supply, Cayman Imports, Hew's Janitorial Services, Commodity Marketing, Caribbean Gourmet, and Cayman Airways.
Vidyadhara Shetty, President of the Cayman Culinary Society, told the Caymanian Compass, "This was the first time we've done the trade show along with the annual culinary competition. It was a great success."
Also addressing the competitors and guests at the awards were Thomas Jefferson, Minister for Tourism, and William Connolly, president of the Cayman Islands Hotel and Condominium Association. more pictures on facing page
