Cayman chef in international magazine

Local chef Keith Griffin of Bacchus Restaurant is one of four top Caribbean chefs chosen to feature in this month’s edition of the popular SELF magazine.

Chef Keith has been tempting the palates of Grand Cayman’s diners for the past 20 years and is well known for his efforts to promote the Cayman’s culinary heritage through the Cayman Culinary Society as well as working closely with the Cayman Islands Department of Tourism to encourage the development of the Cayman Islands as a gourmet destination.

SELF magazine is a production of Conde Net which also publishes ‘Conde Naste Traveller’, ‘Vogue’ and ‘Glamour’ magazines, among many others, and targets middle to high income people with a healthy lifestyle.

Chef Keith’s recipe for Coconut Snapper is his second appearance in the magazine and showcases how traditional Caribbean ingredients can be prepared into a mouthwatering and healthy meal. The magazine declares that, ‘…food maestros from the Caribbean and New York, created mouthwatering meals exclusively for SELF readers, our team ditched the artery-clogging fat and heavy oils found in traditional dishes. A variety of seasonings, fibre rich fruit and vegetables salsas will be a treat for your taste buds’.
