Lessons in Texan bbq grilling

The smell of warm coals on a grill and a man sporting a cowboy hat ready to sizzle his steaks is all the ingredients needed for an evening of good food and lots of fun at local gourmet kitchen store Bon Vivant at Governors Square.

The company invited sous chef of the Grand Cayman Marriott Jan Juschtzak to the store to entertain guests with his Texas BBQ recipes recently.

Twenty-five people watched while sipping on specially prepared margaritas and Caybrew beer – donated by the local beer maker – while Chef Jan raised the heat with some of the recipes he serves at his weekly BBQ buffet at the Marriott.

‘It’s summer and the beautiful weather brings out a lot of grilling enthusiasts. With so many preparing their meals outdoors, we wanted to give at-home chefs a few new recipes to use when they pull out their grills,’ said Cynthia Hew, manager of Bon Vivant.

Set in the middle of a retail store, the cooking class featured freshly prepared meats and side dishes.

Guests sat around the half-moon kitchen counter and cocktail tables as Chef Jan set to work.

He went through each step in detail as he prepared Sugar Cured Salmon, Corn and Black Bean Salad, Cowboy Rub Tri-Tip and Prime Rib Seasoned Beef Ribs with Chimichurri Sauce.

These dishes are available at the Grand Cayman Marriott’s traditional Western style Sunday BBQ.

Some of the chef’s fellow foodies sampled this camp fire cuisine, but others were eager to learn more and many asked the chef questions about his menu and smoking techniques.

The Texas BBQ menu at the Marriott runs from 5:30pm to 7:30pm and includes a variety of favourite foods and country and western tunes. While adults enjoy their meals, kids have a special area complete with beach games to call their own.

‘Our guests come to our store with very refined tastes – they know good food and they want to know how to prepare it using all the right tools, so for Texas BBQ we went to someone who does it every weekend at the Grand Cayman Marriott – Chef Jan Juschtzak,’ explained Ms Hew.

‘Chef Jan is a true culinary mastermind; he takes the authenticity of his food and drink very seriously. And, in two hours, Chef Jan opened up a new palate for grilling!’

Bon Vivant hosts cooking classes throughout the year covering a variety of cuisines including Asian and Italian cuisine, tapas, desserts and grilling.
