Celebrate food!

It is Culinary Month here in Cayman and both Blake and I love food. Seriously, we can’t stop eating. So what better way to take advantage of Culinary Month as well as Taste of Cayman than to share some celebrity recipes.

First up, Tina Knowles (Beyonce’s mother) with a very delicious and easy recipe:

Cajun Green Bean Stir-Fry

4 slices bacon, finely chopped

1 medium onion, chopped

2 cloves garlic, minced

2 lbs. green beans, trimmed and sliced in half (8 cups)

¾ lb. baby potatoes, lightly steamed and halved

1 Tbsp. seasoning salt

1 tsp. ground black pepper

½ tsp. cayenne pepper

¼ cup water

In a very large skillet or wok, fry bacon until crisp, 3 to 4 minutes. Add onion and garlic and cook, stirring, until browned, an additional 4 to 5 minutes.

Add green beans, potatoes, seasonings and water and cook, stirring constantly, until beans are just cooked through and tender-crisp, 4 to 5 minutes.

Shrimp tacos

Gweneth Paltrow makes one of the tastiest shrimp tacos ever and she also posts many recipes/wellness advice onto her website goop.com

Bajan Style Shrimp Tacos

2 pounds medium shrimp, peeled and deveined

2 tablespoons olive oil

the juice of one lime

1 teaspoon coarse salt

1 dozen corn tortillas

pico de gallo

lime wedges for serving

Cholula hot sauce (or your favourite hot sauce)

crumbled cotija or feta cheese (optional)

Preheat your grill over high heat. Toss the shrimp together with the olive oil, lime juice and salt. Grill until cooked through, about 2 minutes a side.

To serve, heat the tortillas in a dry frying pan and wrap them in a tea towel to keep warm. Pile a few shrimp on top of each tortilla and serve with a bit of pico de gallo, fresh lime juice, a few dashes of hot sauce and a little of the crumbled cheese if you’d like.

Healthy unfried chicken

And finally, a healthy alternative to fried chicken from Oprah Winfrey:

Unfried Chicken recipe

6 chicken drumsticks

6 chicken breast halves

3 1/2 cups ice water (875 mL)

1 cup plain nonfat yogurt (250 mL)

Vegetable oil

Breading:

1 cup dried Italian bread crumbs (250 mL)

1 cup all-purpose flour (250 mL)

1 tablespoon Old Bay seasoning (15 mL)

1/2 teaspoon each: garlic powder, thyme, basil, oregano (2 mL)

1/8 teaspoon black pepper (0.5 mL)

Remove skin from chicken. Place chicken in large bowl with ice water. Put yogurt into medium bowl. Set aside.

Spray a baking sheet with vegetable oil.

Breading: Combine all ingredients in large tight-sealing bag; shake to mix. Remove two pieces of chicken from ice water. Roll each piece in yogurt. Put chicken into plastic bag, seal and shake, coating thoroughly. Transfer breaded chicken to oiled baking sheet. Repeat until all 12 pieces are breaded. Spray chicken lightly with vegetable oil. Place baking sheet on bottom shelf of 400 degree F (200 degree C) oven and bake for 1 hour, turning pieces every 20 minutes for even browning.
