The August edition of the ever-popular Post Restaurant Italian cooking classes, presented by What’s Hot magazine, took place recently.
Attendees learnt the finer touches of southern Italian cooking under the tutelage of effervescent chef and owner of The Post, Ercole Musso.
According to Chef Ercole, the southern Italian style of cooking features much more frying than other regions of Italy, and this was evident in the dishes he demonstrated.
From stuffed eggplant and rice arancini starters, Chef Ercole demonstrated how easy it can be to create authentic Italian dishes. He also explained various tricks of the trade which can be used in the home kitchen as well.
Two entrees, a tonno alla Siciliana and orecchiette al pomodoro showcased the variety of dishes that make up southern Italian cooking, while the delectable canoli siciliani dessert certainly impressed.
Of course, everyone was also able to sample the dishes, along with a carefully selected glass of wine to match the dish.
The next What’s Hot cooking class will take place on 2 November and focus on dishes from the central region of Italy.
