British Michelin recognised Chef and Author Emily Scott Takes the Reigns of Iconic Caribbean Restaurant

This month renowned British chef and author Emily Scott has been announced as the new Executive Consultant Chef, along with Kye Byford as Head Chef, of the well-loved Calypso Grill restaurant in the Cayman Islands in the Caribbean. For Emily a sense of place is everything and she is excited about building on Calypso Grill’s rich history and bringing people together.

Emily, known for her ‘less is more’ ethos, simply food done well, will be taking the reins of the iconic Calypso Grill restaurant which has formulated quite a loyal following over the years. Building on that reputation Emily will use her passion for taking a few ingredients and letting them shine. Head Chef Kye Byford formerly of Emily’s restaurant Emily Scott Food in Cornwall, England, will be heading up the kitchen at Calypso Grill.

Having worked together for over five years, Kye is an ambassador for Emily’s brand and ethos, and under guidance from Emily together they will bring her vision to life at this beautiful new location. Talking about the new role Emily Scott said “I am delighted to announce this exciting new partnership in the beautiful Cayman Islands, taking my vision and ethos to a new venue and location. On behalf of myself, Kye, General Manager Lisa and the rest of the Calypso Grill Team, we can’t wait to welcome you.”

On the menu expect delicious Calypso Grill favourites. Menu options include Crispy mango shrimp | Scotch bonnet, rum – Ceviche | Snapper, lime, cilantro, mango – Cracked Conch | Roast garlic mayo – Bloody Mary gazpacho | Watermelon, basil, green olive – Crab linguine | Lemon, chili, olive cream – Wahoo Escoveitch | Sweet onions, scotch bonnet – Filet of beef 8oz | Peppercorn and shallot butter – Snapper Monte Carlo | Tomato vinaigrette and of course the iconic Calypso Grill Sticky Toffee Pudding.

Emily Scott is a chef, author and Executive Consultant Chef of the Calypso Grill in the Cayman Islands. For Emily less is more. Her cooking ethos focusses around taking a few seasonal ingredients and letting them shine. Her classical training in London and France helped form the backbone of her cooking style. Emily has successfully run three restaurants over the past two decades in Cornwall, England including the Harbour Restaurant in the seaside village of Port Isaac, the St Tudy Inn, a countryside pub with a restaurant and rooms, and more recently on the sea wall at the iconic Watergate Bay.

In 2021 Emily was commissioned by the Cabinet Office to curate a special dinner for Royalty and the World Leaders at the G7 summit at the Eden Project in Cornwall. Emily was the first woman to cook for leaders of the western worlds; a stand-out career defining moment for Emily and the rest of her team. Amongst other accolades Emily has been named Best Chef by the South-West Food Magazine and was listed in the top 100 most influential women in hospitality industry two years running. She has been recognised by Michelin since 2016 and appeared on the Great British Menu on BBC2 to represent the South-West back in 2019. She has also made appearances on Saturday Kitchen and Rick Stein’s Cornwall. In 2021 Emily’s debut cookbook Sea & Shore: Recipes and Stories from a Kitchen in Cornwall was published by Hardie Grant, and more recently in 2023 her second book was published Time & Tide: Recipes and Stories from my Coastal Kitchen. Emily is currently writing her 3rd book.
