The Hyatt Regency has launched a new and innovative dining concept at Hemingway’s Restaurant.
Resident food lovers are now able to sample the tropical delights of Brazilian Rodizio every Thursday night, the first restaurant in the Cayman Islands to serve this unique and delicious style of Latin American cuisine.
‘We are delighted to continue with the Hemingways tradition of providing original dining experiences to our resident population and visitors,’ Diego Concha, general manager of the Hyatt Regency, Grand Cayman, said. ‘We have a long history of providing fine dining experiences on the island which goes back 20 years.’
Diners will pay a fixed price of $42, children under 12, $21, and the meal will be served ‘family style’. On arrival guests are offered a Caipirinha or Caipiroshka, both authentic Brazilian cocktails, and are shown to a table either under the stars or inside the re-designed Hemingways restaurant.
Once seated, a Passador – a Brazilian Rodizio waiter – brings bowls of appetizer salads to the table and guests serve the first course amongst themselves. Following appetizers vegetables, black beans, rice. and plantain are served in preparation for the main course.
The Passador then serves each guest a variety of Churrascaria (Brazilian barbeque), expertly carving from a sword which is presented to each table. Wonderful and skillfully marinated meats such as chorizo, chicken, lamb, beef, pork and a fish of the day are carved and served to the guests individually around the table. Guests can be served as many times as they wish or until they have eaten as much as they desire. This colourful dining experience is capped off with a tempting dessert station where guests can sample a wide array of delicious sweets.
‘The cooking style of Brazilian Rodizio embraces healthy eating,’ Mr. Diego said, ‘while conjuring up the wonderful flavours of marinated meats, fish and poultry with a Latin American flair.’

Rodizio is a style of restaurant service in Brazilin and Portuguese restaurants. Guests pay a fixed price and waiters bring an offering of food to each customer at several times throughout the meal. Servers come to the table with knives and a skewer, on which are speared various kinds of meat, most commonly local cuts of beef, pork, or chicken.
