A brick oven and pizza counter is the latest offering at Breezes by the Bay.
The open kitchen greets guests as they enter the George Town restaurant and rum bar, on the site of the former pocket section.
“We have counter space and will add stools,” said Steven Hayes of Tropical Trader Restaurant Group. “It’s a much more interactive area for our tourists and locals with our Rasta Chef, Craig Ellis.”
The brick ovens were imported through Island Supply and the 1,000 pound units took a mixture of forklifts, cranes and heavy lifting gear to put in place.
“That plus a lot of blood, sweat and tears,” Mr. Hayes said.
Good response
He said since the soft launch of the new offering there had been a very good reception from regulars.
“The cruise ships love it and we’re doing quite well,” he said. “The transportation and duty alone represent a significant investment from the owners who want to make an impact.
“Breezes has been here for eight years and we are restructuring within the same concept in order to make an impact down town,” Mr. Hayes said. “We are already getting regulars coming back and are looking to the lunchtime market as well as cruise ships.”
