Seafood fest celebrates new national dishes

The newly recognised national dishes of the Cayman Islands were in the spotlight at this weekend’s LIVE Seafood Festival, as were culinary offerings from around the world.

More that a dozen vendors lined the festival area off Public Beach, treating attendees to the sight of Blue Point oysters being shucked, lobster lollipops being fried, and seafood paella  dished up from a giant pan.

Several booths also provided samples of stew turtle, one of the new national dishes recognised for its significance in maritime history.

Christina Moxam, owner of Cayman Cabana, said her team was excited to feature some of the best seafood coming from Caribbean waters.

“We work really closely with the fishermen and farmers and artisanal producers,” she said, adding that it took time to source enough conch from local producers to keep festival-goers fed.

In addition to their scotch bonnet marinated conch and award-winning lobster lollipops, their booth was one of those featuring free samples of stew turtle, sponsored by the Ministry of Youth, Sports & Heritage .

Moxam encourages anyone who hasn’t tried the dish to give it a go.

Caymanian heavy cake, beloved for its caramelly sweetness and rich, chewy texture, also made the list as a new national dessert.

Renda Cornwall, owner of Renda’s Cassava Cakes, said she was glad to see such a vibrant celebration of Caymanian culture at this year’s festival.

She said the new title is overdue and well deserved.

Cornwall offered full portions for sale, but also provided samples so everyone could enjoy the iconic dessert.

“What makes it so special is that it represents our culture,” she said. “It is unique to us — you won’t find it anywhere else in the world. It’s also just very delicious.”

She added, “It’s a fantastic event, and I’d tell everyone do not miss it next year.”

Entertainers included the Core Band (above), Yohann Fitzgerald, and DJ Natural.
