Cayman Sea Sense, a sustainable seafood programme, and chef Nathan Hyam joined forces last Thursday night to demonstrate some fishy recipes and highlight the importance of supporting sustainable fisheries.
While many fisheries around the world are threatened with collapse, some fisheries remain healthy and sustainable because of successful management and responsible harvesting, stated a press release.
Mr. Hyam highlighted one of these choices at a recent Cooks Class demonstrating three delicious recipes using Tilapia, with mango papaya salsa, szechuan ginger sauce and basil scented Thai coconut curry.
The class, held at the English Bakery, was well received, the press release said. In attendance was Department of Environment Research Officer for Fisheries and Aquaculture, Gene Parsons, and one of Sea Sense’s advisors Mr. Leroy Mitchell, developer of the local Tilapia farm and better known as Uncle Roy.
Mr. Mitchell explained that he developed the Tilapia farm because he was concerned about what was happening to Cayman’s reefs and our local fish supply.
He said that it is hard work and we need increased awareness of what environmentally responsible fish farming could do for Cayman.
Tilapia fish are easily cooked, a healthy alternative and good for the environment, the release said. A 4-ounce serving has only 100 calories-and 0.5 grams of saturated fat.
Its firm white or pinkish flesh has a sweet, mild flavour, takes seasoning well and can be baked, broiled, pan-fried or steamed.
Tilapia is an extremely suitable fish for farming due to the fact they are fast growing, tolerant to water conditions and hardy.
Uncle Roy expressed his enjoyment of Chef Nathan’s recipes, while noting his favourite recipe was Escovitch Tilapia. Local Tilapia is available fresh at Fosters Food Fair at the Airport after 8am on Thursdays. For more information email [email protected] or contact Uncle Roy at 916-0691.
