Cayman Spirits Company adds new distillery, visitors centre

The team behind Seven Fathoms Rum and Governor’s Special Reserve has announced it has broken ground on a new facility. 

“We have finally started Cayman’s newest attraction,” said owner and co-founder Nelson Dilbert. 

“Cayman Spirits Company is full speed ahead with its new 5,000-square-foot distillery and visitors centre. The new distillery will have a new 1,000 gallon still made by the largest still manufacturers in the US, Vendome, and a new vodka column from the oldest still manufactures, CARL Stills in Germany. The new facility will be eco-friendly with geothermal cooling,” he said. 

The company was formed in 2007 and worked from the Cayman Cabana building in George Town, which was popular with tourists. 

“One of the major reasons why we are expanding – so that we can facilitate more tours, in a better and more comfortable environment for visitors,” said owner and co-founder Walker Romanica. 

Construction of the new facility was announced in early 2012. It is to be located off Bronze Road in Industrial Park, east of Esterley Tibbetts Highway. The new building should allow the company to expand their product line into other liqueurs, vodkas and potentially a unique 
Caribbean whisky.
