Darren Zucker is the new Sunshine Grill manager at Sunshine Suites, the latest step in a long and successful career in the Cayman Islands.
The Ohio native first came to Cayman in 1987 to work for the Hyatt.
“I worked for a while on a private yacht and was involved with the Blue Parrott, Tree House and Almond Tree, the old DJs. After Hurricane Ivan, I was recruited by Tropical Trader and helped manage Breezes, and was general manager at Cimboco.
“I had the privilege in 1995 to be named Restaurant Manager of the Year,” he said.
Mr. Zucker was then recruited by the Department of Tourism to launch and manage the customer service programme, PRIDE.
“It was a great experience, I learned a lot but to be frank I missed the face to face contact with guests in the industry, which I really enjoyed.
“So I came back to Sunshine Suites. Lots of people who I brought down loved the food, the staff – a lot of them travel 40 weeks a year and they said it was great to come down, watch the ball game on television and eat macaroni and cheese that they had cooked themselves in the suites. So for a variety of reasons that piqued my curiosity and I rejoined two years ago as associate hotel manager.”
He said Sunshine Suites has a loyal local following and has a good occupancy rate.
“The grill is full day in and day out; it feels like we are in the middle of the season and we’re only just starting,” he said. Mr. Zucker’s responsibilities also include creating the slogans about the burgers that you may have read on the drive down West Bay Road.
