Vegetarian restaurant opens

A new vegetarian restaurant has opened its doors in West Bay.

The Healthy Living Bistro, located in Trafalgar Place, #2 Seven Mile Beach near Neptune, held a soft opening ceremony on Sunday, led by Dr. Jeffrey Thompson, president of the Cayman Islands Conference of Seventh-day Adventists.

Dr. Thompson commended the proprietors of Cayman’s newest vegetarian restaurant, Ina Ramos and Hortor Wood, for their entrepreneurial spirit in meeting a need in the community coupled with providing jobs for the unemployed.

The menu offers such dishes as vegetarian fish filet, jerk ackee, curried scallops, veggie chilli and tofu stir fry. There are also veggie burgers, sandwiches, fresh salads, soups, natural juices and power shakes. Such goodies as peanut bread, homemade bread and pineapple cookies and cakes are made without using eggs.

Chef Rattray is the main cook.

Healthy Living Bistro is open Monday to Thursday from 10am to 10pm and Friday 10am to 3pm. On Saturday, it opens from 7.30pm. The interior seating capacity is 50. The exterior seating capacity is 30 at nights. Catering can be provided for all occasions. Takeout and delivery is also available.
